ABOUT OUR FARM

Cacao Macondo is an emerging company based in Colombia committed to providing clients in the United States 100% traceable fine flavor and aroma cacao of origin. We exclusively produce and market fine flavor and aroma cacao varieties with a primary emphasis on Colombian varieties. Our mission is simple. We want to provide passionate chocolatiers with the finest flavor and aroma cacao for them to work their magic. We wish to work directly with the finest chocolatiers, offering them the highest quality raw material required in their creative process.

OUR PROCESS

Our process begins at Finca Macondo near the town of Quimbaya in the state of Quindío Colombia where once a 32-acre coffee plantation has been transformed into a fine flavor and aroma cacao plantation. Additionally, we allied with our neighbor Finca La Kirika to produce the finest flavor and aroma cacao available in the market.

Our fine flavor and aroma cacao is characterized by a complex sensory profile composed of well-balanced aromatic, fruity, floral and nutty notes. Currently we produce and market the following certified fine flavor and aroma varieties:

*FEAR 5: Federacion Arauquita 5

*ICS 1: Imperial College Selection 1

Our philosophy is based on producing the healthiest, most natural, highest quality fine flavor and aroma raw cacao purposely steering clear of the organic theme which we have found to be riddled with dishonesty. Prior to planting our trees, soil analysis was conducted with certified labs to ensure critical limits of potential hazards were well below acceptable levels. Furthermore, we conduct a complete laboratory analysis with certified labs to each lot we produce, making all results available to our clients. We guarantee that every single bean marketed is free of any potential hazard and we back this up with laboratory analysis results. With a heavy agronomic background as our foundation, we welcome the opportunity to have “the organic” conversation with any of our clients.  

Traceability of every single bean produced and marketed is of the out most importance in our supply chain and allows us to offer our clients 100% fine flavor and aroma cacao of origin. Lots of our two producing farms are never mixed, allowing us to guarantee our clients the origin of each bean right down to the trees. Furthermore, our supply chain connects our farms in Colombia directly with clients in the United States eliminating any additional actor in the supply chain. We are completely committed to providing our clients with 100% fine flavor and  aroma cacao of origin.
